Ethiopia’s Yirgacheffe region is one of the best known coffee producing regions in the world. Like the rest of Ethiopia, it’s divided into several districts and communities with washing stations throughout, each offering a unique representation of the soil, climate, and farming practices, and their affects on the coffee.

In the Gotiti community, nearly a thousand farmers transport their coffee via mule or on foot to local washing station for processing, where, annually, a total volume of 500–600 tons of green coffee is meticulously washed, pulped, fermented, and bagged for sale. 

The Gotiti live in a village in a lush forest where indigenous coffee varieties grow. These indigenous varieties, when properly cared for, are responsible for producing some of the most exceptional coffees in the world, known for their complexity and elegance. We share the above with you in an effort to communicate the specialness of coffees like this one. When considering the complex processes involved, it is near miraculous that we have the opportunity to drink them. 

We tasted notes of jasmine, blueberry yogurt, and honeydew from this heirloom varietal coffee from Ethiopia, brought to us by our friends at Red Fox Coffee Merchants.
