Remera is a small, high elevation town in nothern Burundi, situated near the Rwanda border and the Kbiri National Park. Remera's farms are predominantly 1-2 hectare of mostly unshaded land that do not use commercial fertilizers, relying instead on bananas, maize, cassava, and beans to replenish the soil. Coffee cherries in Remera are hand picked during peak ripeness through multiple harvesting passes, and carted on foot or by bicycle to the Umoco washing station in Kayanza, nearly an hour's drive to the east of Remera. The coffee is then undergoes a two part fermentation process, 12 hours wet ferment followed by 12 hours dry in cement tanks, after which the coffee is dried for 20-25 days on raised beds.Â
This coffee has exceptional body, balanced acidity and sweetness, and a smooth mouthfeel. We got notes of tangerine, plum jam, black tea on the cupping table.
