The northern Cajamarca region is the heart of Peru's specialty coffee industry. High elevations, rich soils, and steady rainfall create perfect conditions for high scoring coffees, grown mostly by families on small farms, averaging between one and two hectares. Passed down through the generations, these farms produce mostly Caturra, Catimor, and Typica. Cherries are hand-picked during peak ripeness where they are bagged and left roadside to be carted to the processing station. Solidario is a fine example of coffee from this unique part of the world and works great for both filter and full immersion brewing.Â
We got notes of apple butter, fudge, and brown sugar from this lovely blend of coffees from Puebla, made available to us by our friends at Red Fox Coffee Merchants.
